Ingredients
- 3 large aubergines
- 4 ripe tomatoes
- 5 finely chopped garlic cloves
- 3 eggs
- 3 tbsp oil
- ½ tsp turmeric
- 1 tsp salt
- ½ tsp pepper
- flatbread to serve
Method
- 1Prick aubergines and grill over direct heat for 20–30 minutes, turning often, until skin is black and flesh completely soft. Baking at 230 °C for 35–45 minutes is an alternative with a milder smoky flavour.
- 2Cool slightly, peel and roughly chop the flesh. Grate tomatoes and discard the skins.
- 3Sauté garlic and turmeric in oil for one minute. Add tomato and cook for 10 minutes until reduced.
- 4Stir in aubergine and cook for 5 minutes. Make space in the pan, add lightly beaten eggs and stir until set.
- 5Mix everything together, season with salt and pepper and serve hot with flatbread.
