Guava duff – steamed guava roll

Ingredients

  • 350 g plain flour
  • 2 tsp baking powder
  • 50 g sugar for dough
  • ½ tsp salt
  • 70 g softened butter for dough
  • 1.5 dl milk
  • 300 g seedless guava flesh, fresh or drained tinned
  • 30 g sugar for filling
  • 60 g butter for sauce
  • 60 g brown sugar
  • 1.5 dl cream
  • 1 tsp vanilla extract

Method

  1. 1Cook chopped guava with 30 g sugar for 5–10 minutes into a thick filling. Cool.
  2. 2Mix flour, baking powder, dough sugar and salt. Rub in butter and stir in milk to make soft dough. Roll a rectangle about 25 x 35 cm.
  3. 3Spread filling, roll from the short edge and seal. Loosely wrap in greased baking paper and foil, allowing expansion.
  4. 4Steam on a rack over boiling water under a tight lid for 70–80 minutes; replenish water. Check dough is cooked through without a raw centre.
  5. 5Gently simmer sauce butter, brown sugar and cream for 3 minutes, stir in vanilla. Slice roll and serve with sauce.
