Ingredients
- 3 eggs
- 150 g sugar
- 150 g butter
- 150 g wheat flour
- ½ tsp ground cardamom
- 1–3 tbsp water if needed
Method
- 1Melt butter and cool until lukewarm. Whisk eggs and sugar until pale and fluffy.
- 2Fold in butter, flour and cardamom. Rest for 30 minutes. Add a little water if the batter is too thick to spread in the iron.
- 3Heat the krumkake iron. Place about 1 tbsp batter in the centre, close and cook until golden. Adjust the amount and cooking time to your iron.
- 4Lift out the wafer and immediately wrap around a cone mould. Hold for a few seconds before removing the mould.
- 5Cool on a rack. Cook and shape one at a time, as the wafers set quickly. Store completely cooled cookies in an airtight tin.
